Growing up, apples were always my favourite fruit. Mom always said “an apple a day keeps the doctor away” and I really believed that 🙂 , so I couldn’t understand why I was at the dentist all the time! What I didn’t know was, how bad refined sugar was, and I used to have A LOT of it every day.
These days I’m mindful about not eating refined sugar and I’m always on the lookout for healthier alternatives.
This recipe combines textures and flavours that just hit the spot! It satisfies the sweet cravings, has a yummy crunch from the nuts, and comforting, sweet aroma from the cinnamon. It’s easy and quick to make and a solution to using those last few apples that no one seems to be eating 🙂
¼ cup water
Coconut oil (½ tsp for each apple)
2 tbsp. gluten-free oats
handful almonds & walnuts roughly chopped
1 tbsp. maple syrup (or more according to taste)
1 tbsp. Chopped dates or raisins
1 tsp cinnamon
Tiny pinch of sea saltMethod
Pre-heat the oven to 175C°
Combine all the ingredients for the filling in a small bowl
With a knife or spoon, scoop out the core of the apples, but not all the way down
Stuff each apple with the filling
Top with the coconut oil
Place in a baking dish
Add water to the dish
Bake for 25 min covered with foil, uncover and bake for a further 25 min or until apples are tender.
Once they are done, baste with juices from the apples
Keeps up to 1 week in the refrigerator.
